Crunchy Flatbread with Garlic

Ingredients
- 400 g flour
- 21 g yeast (0.5 cube)
- 200 ml lukewarm water
- Salt
- flour (for work surface)
- oil (for baking tray)
- 1 egg yolk
- 1 tsp sugar
- 1 tsp Olive oil
- 4 Garlic cloves
- 1 tbsp chopped rosemary
Instructions

Dissolve the yeast in the water and knead with flour and salt into a dough, beat thoroughly and let rise in a warm place for about 1 hour.

Then knead the dough again on a floured work surface, divide it in half, shape into balls and roll out thin round flatbreads of about 25 cm diameter. Place the flatbreads on an oiled baking tray.

Peel the garlic and cut into small cubes.

Whisk together egg yolk, sugar, olive oil and 1 tbsp water; brush the flatbreads with this mixture, sprinkle with garlic and rosemary, bake in a preheated oven at 220°C for about 15 minutes until lightly browned, remove and let cool. Cut into pieces to serve.

If baking a large flatbread, reduce the temperature after 10 minutes to 180°C and bake for an additional 20 minutes.
