Crispy Vegetable Wraps

Ingredients

  • 4 sheets of butter lettuce
  • 2 carrots
  • 2 Zucchini
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 5 spring onions
  • 10 g chives (0.5 bunch)
  • 1 tbsp Olive Oil
  • Salt
  • Pepper
  • 40 g sour cream (2 tbsp)
  • 4 whole wheat tortillas

Instructions

    Wash the lettuce leaves and pat them dry. Peel, wash, and coarsely grate the carrots. Wash, peel, halve lengthwise, and slice the zucchini. Clean, wash, and cut the bell peppers into thin strips.

    Peel, wash, and slice the spring onions into fine rings. Wash and shake the chives dry.

    Heat olive oil in a pan. Sauté the carrots, zucchini, bell peppers, and spring onions over medium heat for about 10 minutes. Season with salt and pepper and stir in the sour cream.

    Warm the tortillas according to package instructions, top with lettuce, and spread the vegetable mixture on top. Roll up, tie with chives at 2 points, and cut in half.
