Steamed Cod

Ingredients
- 4 Cod fillets (approx. 5.9 oz each)
- 4 tbsp Lemon juice
- 2 leeks
- 2 tbsp Rapeseed oil
- 100 ml Vegetable broth
- Salt
- Pepper
- 0.5 tsp dried thyme
- 10 g chives (0.5 bunch)
- 1 Organic lemon
Instructions

Rinse the fish fillets, pat them dry and drizzle with 2 tbsp of lemon juice. Clean the leeks, wash them and slice them into rings.

Heat 1 tbsp of oil in a pan. Pat the fish dry, sear for 2 minutes over medium heat. Then flip, add the remaining lemon juice and 50 ml of vegetable broth, cover and cook for 5-7 minutes over low heat until done.

Meanwhile, heat the remaining oil in a pot. Sauté the leek rings in it for 2 minutes over medium heat. Season with salt, pepper and thyme. Pour in the remaining vegetable broth and cook the leeks for 5 minutes over low heat.

While it's cooking, wash the chives, shake them dry and cut them into rolls. Rinse the lemon and cut it into quarters.

Season the fish fillets and leeks with salt and pepper. Arrange the steamed cod on plates and garnish with chive rolls and lemon quarters.
