Ingredients

  • 1 kg small pumpkin (e.g., Hokkaido; 1 small pumpkin)
  • 1 egg
  • 100 g breadcrumbs
  • 50 g grated Parmesan
  • 2 tsp finely chopped rosemary needles
  • oil for frying

Instructions

    Peel the pumpkin, halve it, remove seeds and cut into sticks about 1 cm wide. Blanch the pumpkin sticks in boiling salted water for 2 minutes, then drain, shock in cold water and let them dry.

    Mix breadcrumbs, Parmesan, and rosemary on a shallow plate. Beat the egg in a deep dish. Dip each pumpkin stick first in the egg, then coat with the breadcrumb mixture. Heat oil in a pot and fry the pumpkin sticks in batches from both sides until golden brown; keep finished sticks warm in an oven at 70°C.
