Ingredients
- 10 eggs
- 3 tbsp Flour
- Salt
- Pepper (freshly ground)
- 0.5 tsp turmeric
- 80 g bread flour
- vegetable oil (for frying)

Boil 8 eggs for about 5 minutes until soft-boiled. Cool and gently peel. Coat in flour. Whisk the remaining eggs and season with salt, pepper, and turmeric.

Coat the eggs in the whisked mixture and dredge in breadcrumbs. Fry in hot oil (≈170 °C) for 2–3 minutes until golden brown. Drain on paper towels and serve with soy chili sauce if desired.
