Ingredients
- 300 ml milk (3.5% fat)
- 200 g wheat flour Type 1050
- 3 eggs
- 1 pinch salt
- 2 tsp rapeseed oil (20 ml)
- 4 tsp Raw cane sugar
- 1 tsp cinnamon

For the batter, whisk milk with flour until smooth. Then add eggs and mix well. Stir in a pinch of salt. Let the batter rest for 10-15 minutes.

Brush a crepe iron or a non-stick pan with oil and heat it up. Pour 1/8 of the batter onto the surface and spread from the center using a ladle or spoon, or pour into the pan and swirl to coat evenly.

Cook over medium heat for 1–2 minutes until golden brown, then flip and bake about 1 minute on the other side. Repeat with remaining batter until all crepes are cooked. Sprinkle cinnamon and sugar, fill the crepes, and serve.
