Skewers with Pancake Rolls

Simple, healthy and tasty – try the skewers with pancake rolls from Spoonsparrow!

Ingredients

  • 200 g Spelt flour Type 1050
  • 350 ml milk (3.5% fat)
  • 50 ml water
  • 4 eggs
  • Salt
  • 1 bunch dill
  • 2 tbsp pink peppercorns
  • 100 g medium‑spicy mustard
  • 300 g smoked salmon
  • 4 tbsp rapeseed oil

Instructions

    Add the flour to a bowl and gradually stir in the water and milk, whisking until smooth; then beat in the eggs. Let the dough rest for 30 minutes.

    Meanwhile finely chop the dill and mix it into the mustard.

  3. 3.

    Using a little oil, cook about twelve pancakes from the prepared dough in a pan, one at a time, and let them cool.

    Spread each pancake thinly with mustard, top with salmon, roll tightly, slice each roll into six pieces, skewer them, and serve garnished with dill.
