Blueberry Pancakes

Ingredients

  • 200 g spelt flour
  • 350 ml milk (3.5% fat)
  • 1 pinch salt
  • 1 tbsp baking powder (5 g)
  • 2 tbsp liquid honey (30 g)
  • 2 Eggs
  • 200 g Blueberries
  • 10 g butter
  • 10 g powdered sugar (from cane sugar)

Instructions

    Whisk spelt flour with milk, salt, baking powder and honey into a smooth batter. Stir in the eggs and let the batter rest for about 30 minutes. In the meantime wash the blueberries, drain them and fold them into the batter.

    Heat butter in a pan. Drop spoonfuls of batter into the pan and cook each side golden brown on medium heat for 1–2 minutes. Remove finished pancakes, keep warm and bake the remaining batter in portions.
