Apple Pancakes

Ingredients
- 4 eggs
- 4 heaping tbsp spelt flour type 1050
- 2 tsp raw cane sugar
- 200 ml Milk (3.5% fat)
- Salt
- 2 Apples
- 4 tsp butter
- 1 tsp cinnamon
- 1 tsp powdered sugar made from raw cane sugar

Crack the eggs, add flour, sugar, milk and salt, whisk into a smooth batter. Let rest for 30 minutes. Meanwhile peel the apples and core them with an apple corer. Slice thin, round pieces.

In a pan melt 1 tsp butter, add a quarter of the apple slices and about a quarter of the pancake batter. Cook each side on low heat for 1–2 minutes until golden brown. Repeat with remaining pancakes. Keep finished pancakes warm in an oven at 80 °C (fan 60 °C; gas: level 1).

Cut the pancakes into pieces, sprinkle with cinnamon and powdered sugar. Serve warm.
