Ingredients
- 8 herring fillets
- 40 g salt (non-iodized)
- 200 ml heavy cream
- 1 small bowl of watercress

Salting the herring: sprinkle with salt and let sit for 2 days, turning occasionally.

Remove skin, pull out dorsal fins, then carefully cut along the central spine to separate the flesh from the back fin, split in half, and remove any remaining bones. Boil the cream, allow it to cool, chop and wash the watercress, combine everything with the herring, and refrigerate for 2–3 days. Just before serving, garnish with fresh watercress.
