Baked Sardines

Baked sardines from Spoonsparrow: The many omega‑3 fatty acids in the fish protect heart and circulation!
Ingredients
- 20 sardines
- Sea salt
- 2 Garlic cloves
- 1 Organic lemon
- 5 tbsp olive oil
- black pepper (freshly ground)
- 6 tbsp spelt whole‑grain flour
- 3 tbsp Rapeseed oil
Instructions

Remove the sardines, discard the heads and rinse. Pat dry, lightly season inside and out with sea salt, and place in a shallow dish.

Peel and finely chop the garlic. Wash the lemon, pat dry and halve it. Grate the zest of one half and squeeze its juice; set aside the other half. Drizzle the sardines with garlic, lemon juice and olive oil, cover and let marinate for about 30 minutes.

Remove from the dish, season with pepper and dredge in flour. Heat oil in a pan. Fry the sardines 4–5 minutes until golden brown, turning once. Slice the reserved lemon half into thin wedges and serve the baked sardines on top.
