Ingredients

  • 12 large shrimp (pre‑cooked, deveined, peeled except for tail segment)
  • 150 g salmon fillet
  • 2 cloves garlic
  • 2 sprigs Mint
  • 0.5 lemon (juice)
  • 4 tbsp olive oil
  • 0.5 tsp Coriander seeds
  • 0.5 tsp Peppercorns

Instructions

    Rinse and pat dry the shrimp and salmon. Cut the salmon into 12 cubes. Peel the garlic and slice thinly. Rinse the mint, shake dry, pluck leaves and roughly chop. Mix the mint with garlic, lemon juice, and olive oil. Grind coriander seeds with peppercorns in a mortar, add to the oil mixture. Combine the seasoning oil with the fish and shrimp, cover, and refrigerate for about 30 minutes.

    Thread the marinated shrimp and salmon onto wooden skewers and grill or cook on a grill pan for 5–6 minutes on each side.
