Ingredients

  • 4 slices beef roulade
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp horseradish (jarred)
  • 4 small slices ham
  • 1 Carrot
  • 1 Shallot
  • 1 Garlic clove
  • 2 tbsp finely chopped parsley
  • 1 tbsp flour
  • 2 tbsp clarified butter
  • 0.5 tsp marjoram
  • 250 ml Beef broth
  • 3 tbsp crème fraîche
  • 1 tbsp chives

Instructions

    Spread the meat, season with salt and pepper, spread horseradish on it, and lay ham slices over the meat.

    Peel carrot, shallot, and garlic; finely chop all ingredients and distribute them over the meat slices. Roll into rouladen and secure with kitchen twine or clamps.

    Coat the rouladen in flour and brown them in hot clarified butter all around. Add marjoram and broth, cover, and simmer on low heat for about 1½ hours.

    Remove the meat and keep warm.

    Stir crème fraîche into the pan juices and reduce slightly; season to taste.

    Pour the sauce over the rouladen and sprinkle with chives. Serve with banded noodles.
