Ingredients

  • 400 g pre-cooked firm potatoes
  • 1 bunch spring onions
  • 4 large eggs
  • salt, pepper from the mill
  • 2 tbsp milk
  • 4 tbsp oil
  • 50 g cherry tomatoes
  • 80 g lamb's lettuce
  • each 2 tsp white wine vinegar and olive oil
  • 80 g trout caviar

Instructions

    Peel, wash, and slice potatoes very thinly. Clean spring onions, rinse, and cut into rings. Whisk eggs with salt, pepper, and milk.

    Heat 3 tbsp oil in a non-stick pan. Fry potato slices in batches for about 15 minutes. Add spring onions and season with a bit of salt and pepper. Pour the egg mixture over and brown the underside. Flip the omelette, add remaining oil to the pan, and brown the other side.

    Rinse tomatoes, clean, and halve them. Clean lamb's lettuce, rinse, and let drain. Whisk vinegar with olive oil, salt, and pepper. Mix tomatoes and lettuce with dressing.

    Cut the omelette into small portions and serve garnished with a dollop of caviar and salad.
