Cream Cheese Tomato Crepes

Ingredients

  • 100 ml sparkling water
  • 2 tbsp heavy cream
  • 1 egg
  • 4 tbsp flour
  • Pinch of salt
  • 2 tbsp chives
  • 1 tomato
  • 60 g cream cheese
  • butter for frying

Instructions

    Whisk together sparkling water, heavy cream, egg, flour, a pinch of salt and 1 Tbsp chives.

    Heat butter in two pans and cook the batter into two golden‑yellow crepes.

  3. 3.

    Wash the tomato, chop it finely and blend with cream cheese and a little salt. Stir in the remaining chives.

  4. 4.

    Spread the cream cheese mixture on the crepes, roll them up and tie with chive stems if desired.
