Cranberry Granola

Ingredients

  • 3 tbsp butter
  • 400 g rolled oats
  • 0.5 vanilla bean (pulp)
  • 3 tbsp sunflower seeds
  • 40 g Pumpkin seeds
  • 30 g coarsely chopped almonds
  • 30 g coconut flakes
  • 3 tbsp maple syrup
  • 3 tbsp water
  • 60 g dried cranberries
  • 2 tbsp raisins

Instructions

    Preheat the oven to 130°C fan (convection). Line two baking trays with parchment paper.

    Melt the butter in a saucepan. In a large bowl, combine all ingredients except the cranberries and raisins. Stir in the melted butter until well mixed.

    Spread the mixture evenly onto the prepared trays. Roast in the oven for about 35 minutes, turning several times, until golden yellow.

    Let the granola cool completely, then fold in the dried cranberries and raisins.

    Transfer the finished granola to a large decorative storage jar and enjoy with yogurt, quark or milk.
