Ingredients

  • 1 onion
  • 1 Garlic clove
  • 1 tbsp butter
  • 1 tsp flour
  • 125 ml meat stock
  • 500 ml heavy cream
  • 1 bunch parsley
  • 1 bunch chervil
  • 1 bunch Basil
  • Salt
  • ground pepper
  • a splash lemon juice
  • 750 g beef fillet
  • 2 tbsp oil
  • 600 g green asparagus
  • 1 bunch spring onions
  • 1 tbsp butter

Instructions

    Peel and dice onion and garlic. Heat butter and sauté onion and garlic until translucent. Sprinkle flour over, stir well. While stirring pour in meat stock and cream, letting the mixture thicken into a creamy sauce. Rinse herbs, shake dry, roughly chop. Fold herbs into the cream sauce and blend finely with a hand blender. Season sauce with salt, pepper, and lemon juice. Rub beef fillet with salt and pepper. Heat oil and sear fillet all around. Place in a heatproof dish and bake in preheated oven at 180°C (gas: level 2-3, fan: 160°C) for 20–30 minutes.

    Rinse asparagus, trim ends generously. Clean spring onions thoroughly. Boil asparagus in salted water for about 8 minutes; add spring onions for the last 2 minutes. Let fillet rest 5–10 minutes before slicing. Stir any pan juices into herb sauce and reheat briefly. Drain asparagus and spring onions. Melt butter and toss vegetables in it. Plate beef with sauce, asparagus, and spring onions. Serve with potatoes.
