Cranberry Cookies

Ingredients
- 250 g softened butter
- 125 g raw cane sugar
- 250 g spelt flour Type 1050
- 125 g whole grain rice flour
- 100 g dried cranberries

Beat the butter and sugar in a bowl until fluffy. Sift in the spelt and rice flours and knead into a smooth dough. Finally fold in the cranberries, wrap the dough in cling film, and chill for about 30 minutes.

Roll out the dough to about 5 mm thickness and cut out star shapes. Place on a baking sheet and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 10–15 minutes. Remove the cranberry cookies from the oven, carefully lift them off the tray, and let cool.
