Crab Cocktail on Chicory

Ingredients
- 250 g cocktail shrimp (from the jar)
- 1 can of clementines (drained weight: 175g)
- 4 small chicory heads
- 3 tbsp mayonnaise
- 2 tsp ketchup
- 1 tbsp yogurt
- Salt
- black pepper (ground)
- cognac
- 1 small baguette

Drain and rinse shrimp, pat dry. Drain clementines and reserve the juice. Clean chicory, cut lengthwise in half, remove the core with a wedge shape, wash, pat dry. Slice inner leaves into fine strips.

Whisk mayonnaise with ketchup, yogurt, and 5 tsp mandarin juice; season with salt, pepper, lemon juice, and cognac.

Combine shrimp, clementines, and chicory; fill the chicory boats and drizzle with sauce. Serve with baguette.
