Ingredients
- 1 onion
- 1 Garlic clove
- 400 g pumpkin flesh
- 2 tbsp olive oil
- 2 tsp Curry powder
- 4 tbsp apple cider vinegar
- 600 ml poultry stock
- salt, pepper from the mill
- Tabasco
- 100 g North Sea crab meat
- chives (for garnish)
Instructions

Peel and finely chop onion and garlic. Dice pumpkin.

Heat olive oil in a pot. Sauté onion, garlic, and pumpkin. Sprinkle curry over and sauté briefly. Deglaze with vinegar and add poultry stock. Season with salt, pepper, and Tabasco. Cover and simmer on moderate heat for about 30 minutes until tender.

Puree the pumpkin finely in the pot. Taste again. Ladle soup into small bowls and add a tablespoon of North Sea crab meat to each. Serve garnished with chives.
