Couscous with Vegetables and Ham

A fresh couscous salad featuring tomatoes, zucchini, and thin slices of Serrano ham – a quick, colorful side dish from Spoonsparrow.

Ingredients

  • 100 g couscous
  • Salt
  • pinch ground coriander
  • pinch ground cumin
  • 3 tomatoes
  • 1 Zucchini
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • white pepper
  • 4 thin slices Serrano ham
  • chives (for garnish)

Instructions

    Mix the couscous in a bowl with a pinch of salt, coriander and cumin. Pour about 200 ml boiling water over it and let stand for ~10 minutes, fluffing occasionally with a fork.

    While the couscous rests, wash the tomatoes, cut off the stems, scoop out the seeds, and dice the flesh into ~1 cm cubes. Dice the zucchini into ~½ cm cubes as well. Toss both vegetable groups separately with olive oil, lemon juice, salt, and white pepper.

    Place four garnish rings (≈8 cm diameter) on a plate. Spoon some couscous onto each ring and press firmly. Layer the tomato and zucchini cubes over the couscous. Arrange the Serrano ham slices on top and gently pull the rings upward to reveal the layers. Garnish with chives and serve.
