Bunty Sausage Spiral with Fried Potatoes

Ingredients
- 600 g waxy potatoes
- Salt
- 150 g cooked beetroot (vacuum packed)
- 3 onions
- 2 tbsp clarified butter
- pepper (ground)
- 1 tbsp freshly chopped parsley
- 2 tbsp Vegetable oil
- 4 bunty sausage spirals
- 200 ml whipping cream
- 1 tsp cumin seeds
- majorana sprigs (for garnish)

Wash the potatoes and cook them in boiling salted water for about 25 minutes. Drain, rinse with cold water, peel and let cool. Slice the beetroot into thin strips. Peel the onions and slice them thinly as well.

Slice the potatoes and fry them in a hot pan with melted clarified butter until golden brown all around. Season with salt, pepper and sprinkle parsley on top.

In another hot pan with oil, fry the bunty sausages on both sides until golden brown, remove them and keep warm in the oven at 80°C using upper and lower heat.

Sauté the onions in the pan fat, add the beetroot and deglaze with cream. Simmer for 3-4 minutes and season with salt, pepper and cumin.

Plate the potatoes with sauce and bunty sausages on plates and serve garnished with majorana sprigs.
