Ingredients
- 400 g couscous
- 400 ml boiling salted water
- 2 red bell pepper halves
- 1 green bell pepper half
- 1 large white onion
- 5 garlic cloves
- 1 tsp coriander powder
- 7 tbsp olive oil
- 3 tbsp white wine vinegar
- Salt
- black pepper (freshly ground)
- 1 bunch parsley (finely chopped)
Instructions

Pour boiling salted water over the couscous and let it absorb for 5 minutes. Fluff with a fork and allow to cool.

Clean, wash, halve, seed, and remove white membranes from the bell peppers, then dice finely.

Peel and finely chop the onion. Peel and finely chop the garlic. Sauté onion and garlic in hot oil until translucent, add diced peppers and cook over medium heat for 3 minutes. Season with coriander, salt, and pepper. Add vinegar and 1/2 cup hot water, then mix the couscous with the vegetables and chopped parsley in a bowl.
