Ingredients

  • 300 g couscous (instant)
  • 400 ml Vegetable broth
  • 2 Tomatoes
  • 1 Red Onion
  • 0.5 cucumber
  • 1 red bell pepper
  • 2 tbsp freshly chopped mint
  • 2 tbsp freshly chopped parsley
  • 1 lemon (juice)
  • 4 tbsp olive oil
  • Salt
  • black pepper (ground)

Instructions

    Pour the boiling vegetable broth over the couscous and let it soak for 10-15 minutes. Fluff with a fork and allow to cool.

    Wash the tomatoes, remove the stem ends, and dice into 0.5 cm cubes. Peel and finely dice the onion. Wash the cucumber and bell pepper, quarter them, remove seeds, and dice into 0.5 cm cubes.

    Combine the couscous with the vegetables, chopped herbs, lemon juice, and olive oil in a large bowl and mix well. Season with salt and pepper and serve.
