Ingredients

  • 1 lime (zest and juice)
  • 4 nectarines
  • 250 g blueberries
  • 150 g Couscous
  • 2 tbsp sugar
  • 1 pinch salt
  • 3 eggs
  • 150 g flour
  • 250 g yogurt
  • butter (for baking)
  • powdered sugar

Instructions

    Mix lime juice and zest with couscous, add 1 cup water.

    Wash blueberries, rinse, and pat dry gently.

    Wash nectarines, halve, remove pits, and cut into strips.

    Separate eggs; beat yolks with sugar, salt, flour, and yogurt until creamy. Whisk egg whites to stiff peaks. Fold in couscous, then the meringue and half of the blueberries into the batter. Heat a little butter in a non‑stick pan, add nectarine strips, pour batter over them, cover, and bake until golden brown.

    Flip with a large lid, finish baking, then break apart with two forks.
