Couscous Salad

Tomatoes, mint & plenty of freshness: The couscous salad brings summer vibes to the plate. Cook now and enjoy!

Ingredients

  • 400 g couscous
  • 550 ml vegetable broth
  • 4 tomatoes
  • 0.5 bunch spring onions
  • 3 Garlic cloves
  • 1 tsp ground coriander
  • Salt
  • Pepper
  • 4 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 20 g mint (1 bundle)

Instructions

    Place couscous in a large bowl, pour hot water or broth over it and let it absorb according to the package instructions. Then fluff with a fork.

    Meanwhile wash the tomatoes, halve them, remove seeds and finely dice. Wash the spring onions, trim and slice into thin rings. Peel the garlic and mince finely.

    Mix the vegetables and season with oil, vinegar, coriander, salt, and pepper. Wash the mint, shake dry, and cut into fine strips.

    Combine couscous, vegetables, and mint in a bowl. Serve the couscous salad in bowls and garnish with mint.
