Ingredients

  • 2 Zucchini
  • 500 g corn kernels (canned or frozen)
  • 2 Garlic cloves
  • 1 tbsp freshly chopped parsley
  • 3 tbsp sunflower oil
  • 2 tbsp lemon juice
  • Salt

    Wash, peel, and dice the zucchini. Drain or thaw the corn.

    Peel and finely chop the garlic. In hot oil sauté the zucchini and garlic for 2-3 minutes. Add the corn and cook another 2-3 minutes. Mix with lemon juice in a bowl, season with salt, and let cool. Taste before serving.
