Ingredients

  • 400 g white fish fillet (e.g., cod, haddock)
  • 1 tbsp finely diced onion
  • 2 egg whites
  • 3 tbsp heavy cream
  • 1 tbsp Lemon Juice
  • 100 g corn kernels (canned, drained)
  • 2 tbsp breadcrumbs
  • Salt
  • white pepper (freshly ground)
  • oil (for frying)

Instructions

    Chop the fish fillets. Blend in portions with onions, cream, egg whites and lemon juice. Mix in corn kernels and breadcrumbs. Season the mixture with salt and pepper.

    Shape the fish batter into patties and press them slightly flat. Heat plenty of oil in a pan and fry the patties 2-3 minutes on each side; they should stay light and not brown too much on the surface.
