Grilled Mackerel Wrapped in Foil

Ingredients

  • 4 mackerel fillets (350g each, gutted and scaled)
  • salt, freshly ground pepper
  • juice of 1 lemon
  • 1 tbsp thyme leaves
  • 1 tsp rosemary needles
  • 1 bunch flat-leaf parsley
  • 2 Garlic cloves
  • 4 tbsp diced tomatoes
  • 6 tbsp Olive oil

Instructions

    Wash the fish and pat dry. Rub with salt and pepper, then drizzle with lemon juice. Preheat oven to 180°C.

    Wash herbs, peel garlic, and finely chop both. Mix in diced tomatoes and 4 tbsp oil; spread mixture into the cavities of each fish.

    Brush four large pieces of foil with remaining oil, wrap each fish tightly, place side by side on a baking tray, and bake for 30 to 35 minutes.
