Ingredients

  • 2 ripe avocados
  • 2 shallots
  • 1 tsp peppercorn (finely chopped)
  • lime juice (to taste)
  • Salt
  • ground pepper (from the mill)
  • 1 red peppercorn (for garnish, sliced into rings)
  • lime slice (and wedges for garnish)
  • nachos

Instructions

    Peel and finely dice the shallots. Peel the avocados, cut them in half lengthwise, remove the pit, and cube the flesh.

    Blend the avocado with lime juice and onions until smooth; add peppercorns and mix thoroughly. Season with salt and ground pepper to taste.

    Arrange the nachos on a platter. Spoon 1 tablespoon of guacamole onto each chip and garnish with a peppercorn ring. Arrange lime wedges around the plate and serve.
