Cooking rhubarb is very easy. At Spoonsparrow there is a step-by-step recipe for the versatile compote.
Ingredients
- 1 kg rhubarb
- 200 g whole-grain sugar
- 1 pinch Vanilla powder

Wash the rhubarb under running lukewarm water and dry it. Trim the leaf bases and stems. Especially with large, thick stalks peel off the skin by sliding a knife along one end of the stalk and peeling in the lengthwise direction.

Cut the rhubarb stalks into pieces about 2 cm long.

Place the rhubarb pieces in a pot. Add the whole-grain sugar and vanilla powder.

Pour in 200 ml water and bring to a boil while stirring occasionally. Cook for about 5 minutes so that the rhubarb is cooked but retains its shape. Spoon into prepared jars as desired.
