Ingredients

  • 300 g flour
  • 100 g sugar
  • 1 pinch salt
  • 0.5 tsp lemon zest
  • 1 egg
  • 200 g cold butter
  • flour (for working surface)
  • 150 g marzipan raw mass
  • 150 g powdered sugar
  • blue food coloring
  • 1 tsp milk
  • powdered sugar (for working and dusting)

Instructions

    Mix the flour with the sugar, salt and lemon zest, sift onto a work surface, press a well in the middle and crack the egg into it. Cut the butter into pieces and distribute around the well. Quickly knead with hands into a smooth dough, shape into a ball and wrap in cling film for 30 minutes in the refrigerator.

    Preheat the oven to 180°C (356°F) fan or conventional heat.

    Roll the dough out thinly on a floured surface to about 3 mm and cut circles. Punch a hole for the gift ribbon with a straw.

    Place the cookies on two baking trays lined with parchment paper and bake in the oven for about 10 minutes until golden yellow.

    Remove, lift from the tray with parchment paper and let cool.

    Knead the marzipan with 70 g powdered sugar and color it light blue with blue food coloring.

    Whisk the remaining powdered sugar with a little milk into a thick icing.

    Roll out the marzipan dough on a dusted work surface thinly and cut circles the size of the cookies. Place these on the cookies, fix with icing and press lightly. Let dry with the icing decoration and then dust with powdered sugar.
