Ingredients

  • 1 egg
  • 160 g butter
  • 80 g sugar
  • 220 g flour
  • a pinch of salt
  • 200 g chopped, peeled hazelnuts
  • 150 g dark chocolate

Instructions

    Preheat the oven to 180°C (350°F) with top and bottom heat.

    Separate the egg. Cream the butter with the sugar and add the yolk. Beat until fluffy, sift in the flour, and mix into a crumbly dough using the dough hooks of an electric hand mixer.

    Beat the egg white with a pinch of salt until lightly frothy.

    Shape small balls from the dough, flatten slightly, then roll first in the egg white and then in the hazelnuts. Place on a parchment-lined baking sheet and bake 8-10 minutes. Remove, lift with parchment, and let cool.

    Meanwhile, roughly chop the chocolate, melt over a hot but not boiling water bath, remove from heat, and let it cool to lukewarm. Fill a freezer bag, cut a small corner, and use to decorate the cookies. Let dry and serve.
