Butter Cookies French Style (Sablés)

Ingredients
- 250 g flour
- 50 g ground almonds
- 1 tsp lemon zest
- 130 g sugar
- 1 egg
- 220 g butter
- flour (for the work surface)

Mix the flour with the almonds, lemon zest, sugar and salt; sift onto the work surface, press a well in the middle, crack the egg into it and scatter butter pieces around the well. Quickly knead by hand into a smooth dough, shape into a ball and wrap in cling film for 30 minutes in the refrigerator.

Preheat the oven to 180 °C (top and bottom heat).

Roll out the dough on a floured surface to 0.3 cm thickness and cut circles (~4 cm diameter). Place them on a baking sheet lined with parchment paper and bake in the preheated oven for 10–12 minutes. Remove, cool slightly and let rest completely on a wire rack. Serve arranged in small bowls.
