Ingredients

  • 100 g Arugula
  • 2 stalks Parsley
  • 2 stalks coriander
  • 200 g pickled artichokes (jar)
  • 300 g cherry tomatoes
  • 150 g turkey ham
  • 200 g mozzarella
  • 2 Spring Onions
  • 4 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • 1 tbsp Lemon Juice
  • 1 pinch sugar
  • Salt
  • pepper (ground)

Instructions

    Wash, clean and tear the arugula into small pieces as needed. Remove the leaves from the herbs and add them with the arugula to a bowl. Quarter the artichokes. Wash and halve the tomatoes. Dice the turkey ham into small cubes. Slice the mozzarella into rounds. Wash, trim and slice the spring onions into thin rings.

    Add all prepared ingredients to the bowl and gently mix. Whisk together the oil, balsamic vinegar, lemon juice, 2–3 tbsp water and sugar; season with salt and pepper. Drizzle over the salad and serve.
