Ingredients

  • 3 tbsp oil
  • 2 tsp Curry powder
  • 600 g Chicken breast fillet
  • 1 organic lime (zest)
  • 2 tbsp Lime juice
  • 250 g low-fat milk yogurt
  • Salt
  • Pepper
  • 1 bunch spring onions
  • 1 bunch arugula
  • 400 g ripe tomatoes
  • 2 Organic Limes
  • 40 g cashew nuts

Instructions

    Whisk oil with curry powder and brush the meat on both sides. Cover and marinate in the fridge for 20 minutes.

    Meanwhile, mix the remaining dressing with lime zest, lime juice, yogurt, salt, and pepper. Trim and chop spring onions, wash arugula, slice tomatoes.

    Cook the meat in a greased grill pan or on the grill over medium heat for 4-6 minutes per side, seasoning with salt and pepper. Halve limes and sear the cut sides for 1-2 minutes.

    Slice the meat into strips and arrange on a plate with tomatoes, spring onions, limes, and arugula. Drizzle with dressing, sprinkle cashew nuts, season with salt and pepper, and serve.
