Ingredients

  • 350 g couscous
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 Spring Onions
  • 1 Red Onion
  • 3 Garlic cloves
  • 1 tsp ground coriander
  • 4 tbsp olive oil
  • 3 tbsp white wine vinegar
  • Salt
  • black pepper (freshly ground)
  • a handful parsley
  • Bubikopf basil (for garnish)

Instructions

    Pour 350 ml boiling salted water over the couscous and let it absorb for 5 minutes. Fluff with a fork and allow to cool. Wash, halve, deseed, and finely dice the bell peppers. Peel, halve, and slice the red onion into thin strips. Trim the spring onions; cut the white part into fine rings and chop the green parts. Peel and mince the garlic cloves.

    Place the vegetables in a bowl, season with coriander, chopped parsley, salt, and pepper, then add olive oil and vinegar. Mix well with the couscous. Taste and adjust seasoning, then fill glasses with the salad. Serve garnished with basil.
