Ingredients

  • 500 g fresh green asparagus
  • Salt
  • 20 Cherry tomatoes
  • 2 red onions
  • 600 g beef fillet (center cut, ready to cook)
  • 30 g clarified butter
  • pepper (ground)
  • 20 g butter
  • herb butter (for plating)
  • chervil (for garnish)

Instructions

    Preheat the oven to 120 °C with upper and lower heat. Wash the asparagus, peel the lower third, trim the woody ends, and cook in boiling salted water for 4‑5 minutes. Drain, rinse under cold water, and let drain well.

    Wash the tomatoes. Peel the onions and slice into fine strips. Rinse the meat, pat dry, trim fat, and cut into four slices. In a pan melt the clarified butter and sear the meat on all sides. Season with salt and pepper, then bake in the preheated oven for 30‑40 minutes (depending on desired doneness).

    Add the asparagus to the pan and sauté occasionally. Add the tomatoes and onions and cook together. Stir in the butter until it foams. Arrange the asparagus in a grid pattern on warmed plates, place one slice of beef fillet on each, garnish with onions and a touch of herb butter, arrange tomatoes around them, and decorate with chervil before serving.
