Ingredients

  • 2 smaller watermelons
  • 500 ml buttermilk (very cold)
  • sugar (to taste)
  • 4 sprigs Mint
  • amaretto biscuits (for garnish)
  • blackcurrant rusk (for garnish)

Instructions

    Wash the melons, halve them, scrape out the seeds and hollow out the flesh into flower shapes with a spoon. Chill the melon cups well.

    Place the fruit flesh in a blender with buttermilk and sugar and blend vigorously. Fill the chilled melon halves with the puree, arrange on plates, and serve garnished with biscuits, blackcurrant rusk, and mint sprigs.
