Ingredients
- 1 small honey melon
- 2 tbsp lemon juice
- 2 tbsp vanilla sugar
- 1 tbsp pine nuts
- 4 scoops lemon sorbet
- mint (for garnish)

Prepare: about 10 minutes plus chilling time.

Peel the melon, cut the flesh into small pieces and puree with lemon juice and vanilla sugar. Fill dessert bowls with the melon purée, cover and refrigerate for at least 1 hour.

Just before serving, toast the pine nuts in a dry pan until golden.

Add two scoops of lemon sorbet to each chilled bowl, sprinkle with toasted pine nuts and garnish with mint.
