Ingredients

  • 400 g Whole wheat penne
  • Salt
  • 2 cloves garlic
  • 1 Shallot
  • 250 g fresh leaf spinach
  • 60 g Emmental cheese
  • 3 tbsp butter
  • 2 tbsp spelt whole wheat flour
  • 200 ml whipping cream
  • 200 ml Milk (3.5% fat)
  • ground pepper from the mill
  • nutmeg

Instructions

    Cook pasta according to package instructions in plenty of boiling salted water until al dente. Peel and finely dice garlic and shallot. Wash, trim, and tear spinach into bite‑size pieces. Grate cheese.

    Heat butter in a pan and sauté the garlic–shallot mixture. Add spinach and let it wilt. Dust with flour. Pour in cream and milk, stir in cheese. Simmer for 2 minutes over medium heat. Season spinach sauce with salt, pepper, and freshly grated nutmeg.

    Drain pasta in a colander, let it drain, then mix into the spinach sauce. Distribute onto preheated plates and serve immediately.
