Ingredients
- 500 g gooseberries
- 140 g sugar
- 500 ml white wine
- 20 g cornstarch

Wash the gooseberries, pat dry, then simmer gently with sugar and white wine in a pot for about 5 minutes.

Whisk the cornstarch with 2 tablespoons of water, add to the berries, stir, and bring back to a gentle boil until thickened. Pour into a glass bowl and refrigerate until cold.
