Candied Oranges

Ingredients
- 500 g untreated blood orange
- 850 g sugar

Rinse the oranges hot, dry them and cut into slices.

Place in a pot, cover with water, bring to a boil and simmer over low heat for about 10 minutes. Remove the fruit, measure out 300 ml of the liquid, mix with 100 g sugar, return to a boil and cook until the sugar dissolves and remove from heat. Place the orange slices in the syrup and let steep overnight.

On the next day, remove the orange slices from the syrup, reheat with an additional 100 g sugar, dissolve the sugar and steep the slices again overnight. Repeat this process five more times and finally heat the last syrup with 150 g sugar. Add the fruit slices, bring to a boil, remove, place on parchment‑lined baking sheet and let dry for about two days.
