Green Asparagus Salad

A fresh sprout vegetable salad featuring green asparagus, balsamic vinegar, olive oil, capers, basil and lemon zest strips. Try this and other recipes from Spoonsparrow!

Ingredients

  • 1 kg green asparagus
  • Salt
  • 4 tbsp balsamic vinegar
  • pepper (ground)
  • 6 tbsp Olive oil
  • 1 tbsp capers
  • basil leaves
  • fine lemon zest strips

Instructions

    Wash the asparagus, peel only the lower third and trim the ends.

    Cook the asparagus in boiling salted water for about 10–12 minutes until tender but still crisp.

    Whisk together vinegar, salt, pepper and olive oil.

    Drain the asparagus, let it drain, then toss while warm with the dressing. Sprinkle with capers, basil leaves and lemon zest strips before serving.
