Lime Yogurt Squares with Tropical Fruits
Fresh lime yogurt squares with tropical fruits bring a burst of flavor to the coffee table.
Ingredients
- 300 g dark chocolate
- 100 g puffed rice cereal
- 400 g yogurt (3.5% fat)
- 400 g cream cheese
- 1 tbsp grated lime zest
- 3 tbsp Lime juice
- 6 tbsp honey
- 200 ml whipping cream
- 10 sheets of white gelatin
- 24 physalis
- 12 kumquats
- 2 kakis

Coarsely chop the chocolate and melt it over a hot, not boiling water bath. Remove from heat, let cool slightly, fold in the puffed rice, and spread the mixture evenly into a parchment-lined rectangular pan (20x30 cm).

Whisk together the yogurt, cream cheese, lime zest, lime juice, and honey. Beat the cream until stiff peaks form and fold it into the yogurt mixture. Soak the gelatin sheets in cold water, then dissolve them in a small pot with just enough liquid to make a thin syrup. Add 2 tbsp of lime cream to the gelatin, stir, then mix the gelatin blend into the remaining cream and spread over the puffed rice base. Chill for at least 2 hours.

Carefully open the physalis shells and turn them upside down. Rinse the kumquats in hot water and slice them crosswise. Wash the kakis and cut them into thin slivers. Using a hot, sharp knife, cut the cake into 24 small squares and top each square with fruit. Dust with powdered sugar if desired.
