Small Cheesecake Cups with Strawberries
Sweet dessert or a delightful addition to your summer coffee table, these small cheesecake cups are topped with fresh strawberries and finished with a touch of mint.
Ingredients
- 100 g butter cookies
- 100 g Ground Almonds
- 100 g butter
- 250 g strawberries
- 200 g Cream cheese
- 100 g quark (fresh cheese)
- 50 g powdered sugar
- 1 tbsp Lemon Juice
- 80 ml whipping cream
- mint leaves for garnish

Crush the cookies finely and mix with the almonds in a bowl. Melt the butter and stir it into the mixture. Press the dough into four tartlet molds (about 10 cm diameter), shaping a rim, and refrigerate.

Wash, hull, and slice four strawberries for garnish. Puree the remaining strawberries finely. Whisk together the cream cheese, quark, powdered sugar, and lemon juice until smooth. Beat the whipping cream to stiff peaks and fold it into the strawberry mixture. Fill the tartlets with the filling and chill for at least one hour before serving.
