Cold Cucumber Soup with Leek

Ingredients

  • 1 cucumber
  • 1 small stalk of leek
  • 250 ml buttermilk
  • 4 tbsp Lemon juice
  • Salt
  • white pepper
  • 1 tbsp chopped dill
  • 1 tbsp chopped parsley
  • Tabasco (to taste)

Instructions

    Wash the cucumber, halve it lengthwise and scrape out the seeds. Cut the cucumber into small pieces.

    Clean and wash the leek, cut it into thin strips. Set aside 4 teaspoons of the leek, mix the remaining leek with the cucumber pieces and blend together with dill and parsley in a blender.

    Add the buttermilk to the mixture. If needed, thin the soup with cold vegetable stock. Season with lemon juice, salt, pepper and Tabasco. Serve well chilled garnished with leek.
