Ingredients
- 2 salad cucumbers (about 300 g)
- 1 white onion
- 0.5 l chicken broth
- 150 g crème fraîche
- Salt
- Pepper (freshly ground)
- 0.5 red bell pepper (cut into small cubes)

Instructions

Peel the cucumbers and dice the flesh; set aside a few cubes for garnish. Peel and dice the onion as well. Blend both together. Stir in lukewarm chicken broth and crème fraîche. Season with salt and pepper, taste, then chill.

Serve garnished with diced bell pepper, cucumber cubes, and mint leaves.
