Cold Cucumber Soup

Ingredients

  • 600 g yogurt
  • 200 g Sour Cream
  • 100 g walnuts (peeled)
  • 1 salad cucumber
  • 1 Garlic clove
  • Salt
  • Pepper
  • 2 tbsp walnut oil

Instructions

    Wash the cucumber hot, cut it lengthwise in half, scrape out the seeds and dice into small cubes, season with salt and let stand to draw out water. Roughly chop the walnuts and toast them in a dry pan without fat, set aside and cool.

    Whisk sour cream and yogurt until smooth, season with salt and pepper, peel the garlic clove and squeeze its juice into the mixture. Drain the cucumber pieces of their water and fold them into the yogurt mixture, taste and refrigerate. Serve the soup on plates, sprinkle with walnuts and drizzle with walnut oil.
