Cold Potato-Cucumber Soup

Ingredients
- 3 cucumbers
- 1 onion
- 1 tbsp butter
- 125 ml white wine
- 400 ml Vegetable broth
- 250 g Potatoes
- 200 g heavy cream
- 2 tbsp chopped parsley
- Salt
- ground pepper
Instructions

Peel and dice the potatoes. Peel and dice the onion. Peel the cucumbers and cut into small cubes.

Heat the butter in a pot and sauté the onion until translucent. Add the potatoes, cook briefly, then deglaze with white wine.

Add the vegetable broth and simmer the potatoes over medium heat until tender. Set the pot aside to cool.

Mash the cooled potatoes in the soup with a potato masher. Blend two-thirds of the cucumber cubes and parsley with an immersion blender, then add the sour cream and blend into the soup.

Season with salt and pepper. Serve chilled topped with the remaining cucumber cubes and fresh parsley.
